A Great Summer Recipe

Brownies and Ice Cream

Cook a pan of 9X13 brownies.

As soon as you remove from the oven add 1/2 gallon of vanilla ice cream.  Stir until well blended and freeze.

Once frozen, cut into squares and serve.  If you want to be creative add toppings of your choice.

Great quick dessert for your July 4th picnic.

Frozen Latte

1 cup skim milk-add ice to make 3 cups
1 box fat free sugar free vanilla pudding
1 cup frozen fat free cool whip
1 TBS. instant coffee

Mix in blender and serve with cool whip on top and a sprinkle of cinnamon.

Pretty Accessories

Accessories are my weakness.  I love fashion accessories and home decorating accessories.  It is the little extras that set the tone of an outfit or a room in your home.  Your choice of jewelry can dress up or dress down an outfit.  My love for jewelry at a young age drew me to a hobbie of beading.  I also love pieces that you can change up for a new look.  Or take a dated or ugly piece of jewelry and make it into something updated and beautiful.

Getting Fit For Health

If only Jillian could move in with us for a few weeks.  Who wouldn't lose weight with Jillian around?  I love watching Biggest Loser.  Not only is the show motivating but at times very thought provoking.  Have you ever ask yourself are you the best you can be?  If you are not, have you thought about what might be holding you back from being the best you can be?  That is certainly what God desires for us......so "be the best you can be today" or begin to discover what is holding you back.

Cheesecake Breakfast

2 cans crescent rolls

2 (8 oz.) packages of cream cheese

1 cup of sugar

1 egg


Mix for topping:

1 teaspoon cinnamon

½ cup chopped pecans

½ cup sugar
Mix cream cheese, sugar and egg yolk. Unroll and line 9x13 pan (lightly greased) with 1 can of crescent rolls. Cover with cream cheese mixture. Top with second can of crescent rolls. Brush with egg white and sprinkle cinnamon nut mixture topping. (I spray the topping with pam) Bake until browned at 350 degrees.
This can be put together the night before and refrigerated. Just bake when you need it.

Four Day Work Week and Our Economy (reposting)

I posted this 2 years ago but I think it bears repeating.  I emailed our Govenor and State Superintendent of Education last year with these suggestions.  I emailed our new Govenor this year.  I also suggested offering a tax break to small businesses that close on Friday.  Yes there are many logistical issues to work out but what do we have to lose?  And doesn't it appear obvious that we have alot we could gain by making these changes?

Our present economic situation is like nothing most of us have seen in our life time. We have gas and energy concerns....high cost and shortage. Businesses laying off employees. Obvious awnser...a manditory 4 day work week. Seem silly? Think about it. If we all worked 4 10 hour days, businesses would have the energy savings of 1 day a week. Wonder how many jobs could be saved? Think about if school buses did not run one day a week, the gas and financial savings would save alot of teaching jobs and pay for alot of teaching supplies.

Wouldn't it be great to have Friday declared as "family day"? Moms, Dads, children spending time together. Look at our First Family, the dog, the garden, a wholesome all America family. It is obvious they enjoy being together. Could it be possilbe they are setting the tone, reminding us of what is really important?

Sounds to me like everyone would win. Wonder why we are not hearing any discussion about this?

Hot Krispy Kreme Donuts

Last night my daughter and the kids had a date night.  Daddy was busy so the three of them went to see Diary of a Wimpy Kid.  After the movie my daughter took them to Krispy Kreme.  She took them inside so they could see the donuts being made.

She called me to tell me the kids had their first experience with Krispy Kreme hot glazed.  As Drake (8 years old) was eating his first one he said "where did my donut go?"  They do disappear quite fast.  Addison (5 years old) said as they were driving off "that has changed my life!"  
What a fun memory of mom taking them to experience their first KK hot glazed.

A Great Recipe for Adults and Kids

I am not a lover of meatloaf.  Mostly because they are often so soggy.  My friend gave me a recipe for a great meatloaf.  You cook the meatloaf in muffin tins.  Not soggy at all. My grandchildren loved it and so did I. The kids love the size.  They can pick up and eat like a muffin.

Mini Meatloafs

2 lbs. hamburger-I use extra lean
3/4 cup breadcrumbs
1/4 cup chopped onion
1 1/2 tsp salt
1/4 tsp pepper
1 egg, beaten
3/4 cup milk

Sauce

1/2 cup ketschup
2 tbsp brown sugar
1/2 tsp mustard

Preheat oven to 350 degrees.

Combine meatloaf ingredients, mix thoroughly.  Spray muffin tins with Pam.  Fill each cup just above  1/2 way.  Press down.  Usually makes 24 muffins.

Mix together sauce ingredients-I double the sauce recipe.  Spoon into each muffin cup.

Bake 20-25 minutes.  Great topped with grated cheese and put back in the oven for the last 5 minutes of cooking time.

My CVS Deal

Last week I went to CVS with my coupons clipped to my sale paper.  Items circled and ready to shop!  The best deal was one I stumbled on.  I had a Physcians Formula CVS coupon from scanning my card in the store.  I did not need a thing in makeup but the coupon was $7.00.  Physicians Formula cosmetics were 40% off.  I found a product for $7.00 that I would not have purchased otherwise.  The Physcians Formula version of make your eyelashes grow.  What made this such a great deal besides getting it free?  There was a sticker on the product for a mail in rebate for the price of the product, $10.99.  How cool is that?  I get paid $10.99 to take that product home.

Thankful For Progress

I have missed blogging.  Good to be back.  Drake and Addison are having a great school year.  Drake has made alot of progress concerning his OCD and Tourettes.  It is interesting how many conflicting reports we have gotten from the school professionals and medical professionals concern Asbergers diagnosis.  Some say yes, some say no, some don't seem to be sure so they say no.  We really don't care what it is called as long as he gets the relief he needs from the anxiety.  Thank God my daughter has been diligent in pushing to get Drake the help he needs.  Otherwise, he would have been one of those kids that fell through the cracks as far as accomodations are concerned and would have turned into a real discipline problem.

He has alot of sensory issues that seem to cause alot of his anxiety.  Occupational Therapy has been the biggest help.  We began to see results right away.  Looking back over the last year, it is amazing at the progress primarily thanks to the OT's.  Our little guy has worked so hard doing his part.
